Delicious easy pasta dish made with heart healthy fish! Portions per serving on the Good Habits Plan 1 X Fat 2 X Carbohydrate 1 ½ X Protein 1 ½ X Veg
Ingredients
- 2 teaspoon olive oil
- 1 small Onion chopped
- 1 garlic clove chopped
- 210g chopped tomatoes canned
- 2 tablespoon fresh parsley chopped
- 2 tablespoon fresh basil shredded
- 120g wholemeal spaghetti
- 60g peeled prawns
- 60g canned tuna in brine drained
- 60g frozen cooked mussels thawed
- Salt and freshly ground black pepper
- 10 Fresh parsley or basil leaves to garnish
Instructions
- Heat the oil in a medium-sized saucepan and gently cook the onion and garlic for 5 minutes until the onion becomes translucent. Add the tomatoes and fresh herbs and simmer, uncovered, for 15-20 minutes, or until the sauce has reduced and thickened
- Meanwhile, cook the spaghetti in plenty of lightly salted boiling water for 8-10 minutes until al dente
- Season the tomato sauce with salt and pepper. Stir in the prawns, tuna and mussels and heat through for 5 minutes.
- Drain the cooked spaghetti and divide between 2 warm bowls. Spoon the marinara sauce over the pasta. Garnish and serve immediately.
