Merry Christmas Pudding

Make this in advance and enjoy a healthier but just as tasty pudding this Xmas! Selections per serving on the Good Habits Plan ½ x carbohydrate 1 x fruit 100 Optional Calories

  1. Soaking the dried fruit in alcohol gives this Christmas pudding a deliciously mellow flavour. Don't be alarmed by the grated parsnip in the recipe - it adds moisture and means less sugar is needed
  2. Put the raisins and currants in a large mixing bowl and pour over enough boiling water to cover. Soak for about 5 minutes and then drain well. (this helps to plump up the fruit) Add the brandy, cover and leave to soak for 6 - 8 hours. or overnight.
  3. Add all the remaining ingredients, except the margarine, and mix thoroughly. Use the margarine to grease a 900 ml pudding basin and spoon in the mixture. Level the surface and cover the mixture with a circle of grease-proof paper which fits inside the basin. Cover the top of the basin with a piece of foil or grease-proof paper and secure it firmly.

  4. Put the basin in a steamer over simmering water and steam for 5 hours, topping up the steamer with extra boiling water as required. Don't allow the steamer to boil dry and keep the steaming process constant.
  5. Allow the pudding to cool and then replace the piece of foil or grease-proof paper with a fresh piece. Store in a cool dry place.
  6. On Christmas Day, steam the pudding for 2 hours to reheat.
