Evelyn from the Motor City Good Habits meeting sent us this delicious family favourite! Portions per serving on the Good Habits Plan 2 fats,1 carb, 2/3 protein depending on size of lobster ½ veg 30 optional calories
Ingredients
- 2 tablespoon olive oil
- 25g butter
- 2 small chilies
- 2 small cloves garlic
- 1 lobster tail boiled chopped into pieces
- 120g black ink linguine
- lambs lettuce
- 3 spring onions chopped
Instructions
- Cook the pasta according to manufacturer’s instructions
- Heat oil in a large non-stick frying pan, over medium heat.
- Add the Chiles, garlic, and cook for a minute. Add the butter reduce the heat to low.
- Add the lobster toss it through, then add the linguine , and the rocket and spring onions
- Divide into 4 servings, add more rocket if you like, add a wedge of lemon.
